something delicious for everyone

It’s time for some veg

This is a vegetarian version of a super flavorful recipe for a classic Laos and Thai dish. It boasts great taste and texture. It looks beautiful plated either directly in cabbage cups or in a bowl with cabbage and lime wedges on the side. The recipe calls for roasted peanuts, which are a great addition (but it’s also good without).

The full recipe from Andy Baraghani (on Bon Appetit’s Healthyish) can be found here.

These are the ingredients you want to have on hand:

  • ¼ cup roasted, skinless peanuts (optional)
  • 4 Tbsp. vegetable oil
  • 12 oz. shiitake mushrooms
  • 3 scallions
  • 2 garlic cloves
  • 1 1″ piece ginger
  • Kosher salt
  • 1 medium shallot
  • 1 red chile, such as Holland, Fresno, or Thai
  • 1 cup mint leaves
  • 1 Tbsp. fish sauce
  • ¼ head of green cabbage
  • Lime wedges
chopped shiitake mushrooms, thinly sliced shallots, grated ginger, grated garlic and thinly sliced scallions

Enjoy as an appetizer or as a fantastic vegetarian meal!
