Here is a version of not-terribly-unhealthy chocolate peanut butter cups

Bottom layer:

2 tbsp coconut oil

1/4 cup PB

1/2 tsp vanilla extract

1 1/2 tbsp honey (I have seen recipes call for 2 tbsp but I find that too sweet. Play around with this quantity to your taste).

Top Layer:

2 tbsp coconut oil

1/4 cup PB

1/4 cup unsweetened cocoa powder

1/2 tsp vanilla extract

1 1/2 tbsp honey (* see note in bottom layer re: honey)

Combine all ingredients for bottom layer, scoop in 1 tbsp into mini muffin tin liners or for wider/shorter cups into regular muffin tin liners. pop in the freezer while combining ingredients for top layer (about 10 minutes). Pour 1 tbsp into each cup to cover first layer and place back in freezer for at least 15 minutes.

Store the cups in the freezer…if you have any left to store!
